Vegetarian Curry

1 tbs. Vegetable oil
1 Small green pepper
Cored, seeded, and finely chopped
2 Carrots peeled and finely chopped
1 celery stick, finely chopped
3 Large onions peeled and finely chopped
4 Tomatoes, skinned, and chopped
1 tbs lemon juice
1 large eating apple, peeled, cored, and chopped
1oz, dark brown sugar
2 tbs curry powder
2 Tsp, Turmeric.
2 tbs, desiccated coconut
1 oz. Plain flour
½ pint. Vegetable stock
2 tbs. Sultanas
1oz peanuts
Salt
Freshly ground black pepper.

Place the oil, green pepper, and carrots, and cook for 5 minutes.

Stir in the onions, tomatoes, lemon juice, apple, sugar, curry powder, turmeric and coconut. Cover and cook for 10 minutes, stirring half way through cooking.

Stir in the flour, hot stock, sultanas, peanuts, salt, and pepper. Cover and cook for 4 minutes, stirring half way through cooking.

Serve with brown rice.
