Valeries Fat Man’s Shrimp over Rice (Serves 6)
1 package of frozen chopped
Spinach ( you can use fresh)
½ cup sour cream
1 can cream of mushroom soup (Campbells )
18 oz..can of mushrooms drained or ½ lb. Fresh, sliced
¼ cup Parmesan cheese
2 Cups cooked shrimp (prawns)
1 Can French fried onion rings(for topping ) or you can use crushed herb croutons
or crushed crisps or cornflakes . I used Onion Salad Krispies made by Danfood,
available in Asda & Tescos and some small shops
1 cup of long gain rice
Method
Cook rice according to instructions. Drain spinach , meanwhile cook the mushrooms
in a little butter and add the drained spinach and cook a little. Put the
cooke drice in the bottom of the dish. Place the spinach /mushroom mix on
top. Mix all the other ingredients together and pour over the spinach and
rice. place on eth topping of your choice. bake @ 350.oF for 35mins. Until
bubbly.
