Sandras Latvian Pickled Pumpkin

Sandra brought this fabulous Latvian Pickled Pumpkin that her Mother used to make for her, apparently she used to tell the children it was pineapple!

1kg of pumpkin cut into 1-2cm cubes
400gms Sugar
2.5 glasses of white vinegar
2.5 glasses of water
cinnamon bark & 4-6 cloves

Mix the sugar, water, vinegar and spices. Bring to the boil, pour over pumpkins and boil until they start to look translucent, do not overboil, or you will have mush!

Seal in clean sterilised jars, keeps in fridge for weeks.
