JULIAS GLUTEN FREE PASTRY


ALL PURPOSE FLOUR RECIPE....

75g finely ground maize meal/polenta

75g rice flour (Doves Farm do a good one)

75g tapioca or potato flour

1 tsp xantham gum

FOR PASTRY...

use 3-4 tablespoons of flour (made up as above)

salt or sugar to taste (depends if for sweet or savour dish)

1 tblsp butter or marg

water to mix to consitency of glazing putty!

Mix together using knife and then spreadinto a non stick baking tin (dont touch with hands as gum makes it sticky - then top with fruit and ground almonds, or roasted veg for a gluten free pastry tart
