Nanna Jeans' Fruit Cake

170g/6oz Butter
170g/6oz Caster Sugar
3 Eggs Beaten
225g/8oz Self Raising Flour/Plain Flour
2 Level Teaspoons of Baking Powder (only with plain flour)
half teaspoon of Cinnamon (or mixed spice)
2 Tablespoons Milk
225g/8oz Mixed Dried Fruit and Cherries
15/20 Blanched Almonds (optional)

Line base and sides of an 18cm tin with baking parchment. Beat
butter and sugar together until soft. Gradually beat the eggs in.
Sift in flour, baking powder (if using) and cinnamon. Mix in milk,
then fruit. Spoon into lined tin. Smooth the top and sprinkle with
almonds. Bake at 160C/325F, Gas mark 3 for 1 and a half
- 2 hours
reducing heat if cake browns to much.

TO MICROWAVE: Add 1 teaspoon of Golden Syrup with the butter and cook
in a suitable greased and base lined dish on full power for 6 minutes
OR until only just dry on top. Leave for 10 minutes before removing
from the dish.
