Elderflower Cordial
two pints of water 1kgm unbleached sugar or English produced (depending on your outlook) three teaspoons citric acid Some people bring the water to the boil, but I dont, personally I just put all the ingredients in a preserving pan or bowl for two days (covered), then strain off, bottle and refrigerate, serve with water as a cordial. To enjoy all year, this can be frozen in ice cubes to add to your glass of water as required (or gin of course). For a variation try adding lavender heads or bruised ginger to the mix!
