COURGETTE
CAKE

12 oz self raising flour
12 oz grated courgette
10 oz demerara sugar (you can use less)
4 eggs
6 oz walnuts chopped
grated lemon rind
mixed spice
pumpkin seeds
1/4 pint vegetable oil ( I have left this out and it has been fine, it depends
on the consistency probably due to the size of the eggs)
(variations: dates, ginger, raisins, apricots, other nuts experiment with
things you like).
Mix sugar, oil and beaten eggs, grated courgette, lemon rind then add in dry
ingeedients mixing well.
Plop into prepared loaf tin and spread evenly.
Bake in moderate oven check after 45 minutes, when skewer comes out dry cake
is ready.
