SUES' TINY MINCE PIES WITH A TWIST
(or as she insists 'Blue Peter Chew Cake')
This name just doesn't do justice to the taste I have to say! These classy little bites are just the thing for a finger buffet cooked the way Sue did in a mini muffin tin, with a gorgeous topping and garnish.
6 oz margarine
6 oz brown sugar
8 oz mixed fruit
2 oz oats
6 oz wholemeal plain flour
1 tspn baking powder
1 egg
handful of chopped nuts.
Melt marge and sugar
and then add other ingredients.
The original Blue Peter recipe suggests to cook in 9 x 11 tin - moderate oven
for 20 – 30 minutes.
Sues version is to cook in patty tin or mini – muffin tin for 10 mins
or until brown. While still hot depress centre of each cake with cork or similar
to make hollow. When cold remove from tin and fill with greek yoghurt sweetened
with honey, or cream cheese and top with halved grapes.
Also very nice using
chocolate brownie mixture and topped with slice of strawberry.
